A satisfying day despite the weather. Stayed indoors all day again due to the bitter cold, but my spirits are up a bit. Had a slow start to the day after staying up very late tending the fire and then sleeping until noon, but my gut is better today and so is the rest of me, creaking joints and all.
I've been struggling with anxiety and depression for a long time, but the anxiety has overtaken the depression lately. To zone out after waking I read the morning newspaper, did the puzzles in it, and then did an online jigsaw puzzle, concentrating on it until I completed it. After all that I was able to prepare the hot food for the chickens, eat a bite of food and take my medicine, and then work in the kitchen.
I cooked a large pot of scrumptious carrot curry soup today. Started with a roasted chicken carcass that still had meat on it, simmering it for over 2 hours to make a nice broth. Added some chicken back in toward the end, when the vegetables (onion, carrots, potatoes, leeks) and red lentils were at least halfway cooked and the seasonings already in. We each ate a bowl of it with skillet-warmed multigrain bread with a smidgen of butter on each slice. It had just the right amount of curry and other seasonings, and just the right texture and mixture of vegetables and legumes, to make it taste heavenly.
- Cooked one of the best soups I've ever made, if I do say so myself
- Practiced French by doing a few lessons and a French Story on Duolingo
- Chatted all evening on and off with my son via Google Hangout; helped him choose a gift for his nephews (my grandsons) who are still opening a gift a day until the Befana comes.
