Attempting the best brownies of all time

Kubla has developed a craving for Brownies.  The ones at the store are full of sugar and chemicals.  I decide to make a healthier version at home.

I look up a recipe online.  I cut the sugar.  I substitute whole wheat flour for white.  It turns out pretty well.  But not as tasty as what we get at the store.

A couple days later—I make some more tweaks.  The result is now as good as we’ve ever had, and much healthier.

The next week I make some more changes—Disaster! Soon I see more store-bought brownies in the house again.

Another week and we feel like brownies again.  I do some more substitutions—Success!

One more set of improvements and we are all very pleased, indeed.

Kubla wants to bake brownies again.  I have a few more ideas up my sleeve.

“Kubla, should we attempt a 6th version of brownies, possibly discovering the best chocolatey goodness of all time, but risk total failure? Or settle for version 5, the best brownies we’ve ever had?”

Jonathan’s Kubla-Approved, Healthy Junk Food Brownie Recipe

Mix in a bowl:

  • 1/2 cup of coca powder
  • 1 cup almond meal
  • 1 teaspoon baking soda

Then in another bowl cream:

  • 1 stick of softened butter
  • 1/2 cup plus 1 tablespoon of sugar
  • 2 teaspoons of vanilla

In a third bowl mix:

  • 2 eggs
  • 1/2 cup of yogurt

Mix together the 2 bowls of wet ingredients.  Then slowly mix in the dry ingredients.

Transfer to a greased baking dish.  Sprinkle in 1/2 cup chocolate chips and mix in so they are just under the surface.

Bake at 350 for 25 minutes.

Fresh out of the oven Brownies are a delight.  But they are even better the next day, when they dry out a little and become extra chewy.
