As I mentioned in my previous post, we’ve got a new cheese supplier, Santi Cheese Market, that I’m trying out. I bought stracciatella and smoked provolone from him, and here’s how we used them this past weekend.

Como mencioné en mi publicación anterior, tenemos un nuevo proveedor de queso, Santi Cheese Market, que estoy probando. Le compré stracciatella y provolone ahumado de él, y así es como los usamos el pasado fin de semana.

Homemade Pappardelle, Humboldt Squid Ragout – Semolina pappardelle. Saute of onion, garlic, carrot, celery, fennel in Olive Oil, deglazed with white wine, then added chopped cherry tomatoes,  bay leaf, gochujang chili paste, doenjang soybean paste, and cooked together for two hours over low heat. Olive oil confited Humboldt squid tentacles added at last minute to serve. Stracciatella cheese over the top. Panko crumbs with gremolata.

Cintas Caseras, Ragú de Jibia – Cintas de semolín. Salteado de cebolla, ajo, zanahoría, apio, hinojo en aceite de oliva, desglasado con vino blanco, y luego agregué cherys picadas, laurel, pasta de aji gochuyang, pasta de soja doenyang, y les conciné juntos durante dos horas sobre fuego lento. Jibia confitado en aceite de oliva agregada al último momento para servir. Queso stracciatella encima. Migas de panko con gremolata.

La Liga de Enologos “R4” El Criollo Rosado 2017, Mendoza

Baked Chicken, Portobello Smoked Provolone Sauce – Chicken thighs, rubbed with fines herbes, baked in the oven until golden brown. Saute of garlic, pepperoncino, portobellos, and green olives, then added smoked provolone and cream. Thickened with an olive oil and flour roux. Broccoli rabe roasted in olive oil, sea salt, and pepper.

Pollo Asado, Salsa de Portobelo-Provolone Ahumado – Muslos de pollo, rociado con finas hierbas, asado en el horno hasta estan dorados. Salteado de ajo, pepperoncino, portobelos, y aceitunas verdes, luego agregué provolone ahumado y crema de leche. Espesado  con un roux de aceite de oliva y harina. Grelos asados en aceite de oliva, sal marina, y pimienta.
