An Italian-Peruvian fusion version of a “causa”, a traditional Peruvian appetizer. The base, potato puree flavored with olive oil, piquillo peppers, blood orange juice, and salt. The topping, a semi-classic veal tonnato, chopped – poached veal, crisp bacon, hard boiled egg, capers, Green Onion, and mint, in a sauce of homemade mayonnaise with tuna, anchovies, capers, rocoto chili, salt and pepper. Around the causa is olive oil with mint, green onion, and salt.

Una versión fusión Italiana-Peruana de una causa, una entrada tradicional peruana. La base, puré de papa saborizado con aceite de oliva, pimienta piquillo, jugo de naranga sanguinea, y sal. Arriba, un semi-clásico vitel thoné, picada – ternera pochada, panceta crocante, huevo duro, alcapparas, verdeos, y menta, en una salsa de mayonesa casera con atún, anchoas, alcaparras, rocotos, sal y pimienta. Alrededor la causa es aceite de oliva con menta, verdeo, y sal.

A surprise as the most popular dish of the week, a Napa Cabbage soup. A coarse puree of cooked Napa cabbage, onion, garlic, merquén (smoked chili) in white wine and vegetable broth, then added a touch of cream, and pre-cooked white beans. Decorated with green onion yogurt, oil with black and white sesame seeds and sumac, and a merquén oil.

Una sorpresa como el plato mas populár de la semana, una sopa de akusay. Un puré grueso de akusay, cebolla, ajo, merquén (ají ahumado) en vino blanco y caldo de verduras, cocido, luego un toque de crema de leche, y alubías blancas precocidas. Adornado con yogúr de verdeo, aceite con semillas de sésamo negro y blanco, y zumac, y un aceite de merquén.
