Homemade Voodoo Spice Mix

I adore New Orleans, and I am obsessed with their spice rubs and spice mixes. There are innumerable varieties, some smoked, some with herbs, some really spicy; and VooDoo mix is particularly one of my favorites. This is my inspired homemade version. I really do put this mix in everything, whether it is soups, sauces, or salad dressing.

Ingredients:
1 tsp Onion Powder or dehydrated onion
1 tsp Dehydrated green onions
1 tsp Garlic powder or dehydrated garlic
1 tsp Salt
2 tsp Paprika
3 tsp Red chilli powder (this quantity gives it a spicy kick, feel free to use 2 tsps or even 1, and increase paprika if you like a milder version)

Method:
You could measure in cups or teaspoons, depending on how much you want to make ahead to store. Also depending on how you use it, you’ll need that much more or less. This spicy mix is better used in small pinches to flavor your dish so I tend to make small batches as needed.

Add all the ingredients to your blender and give them a quick two or three whirls. If you are using powders, you only need a couple of whirls to combine them well. If you are using dehydrated onions and garlic, then you may need a couple more mixes. You are looking for a mixture that’s almost smooth but not quite; mildly coarse.

My absolute favorite use is with Mac and Cheese. Make you preferred method of classic mac and cheese, sprinkle this over the top and enjoy!
