IMMUNE-BOOSTING CHICKEN NOODLE SOUP

It seems like cold and flu season has hit everyone extra hard this year- even now at the beginning of Spring, people are coughing and snivelling and feeling under the weather. We all know that Chicken soup can help a sore throat and soothe a cold, but what about stopping the cold in the first place? Regularly consuming nourishing foods that support immune function is an amazing way to prevent illness. While a healthy diet in general is key to a strong immune system, there are some foods that have a little extra oomph in the immunity department!

This Immune-Boosting Chicken Noodle Soup is an Asian-fusion style dish unlike any chicken soup you’ve made before. The secret is in the broth, which is made of a healing puree of onion, garlic, ginger, red chili, and turmeric. Puree is added to organic chicken broth and makes an incredibly flavourful soup base that can be eaten as is, or turned into this amazing noodle soup.

INGREDIENTS

  • 1 large yellow onion, roughly chopped
  • 1 thumb-sized piece of fresh ginger, peeled and roughly chopped
  • 4 cloves of garlic, peeled
  • 1-2 Thai red chilis (depending on spice preference)
  • 1 Tablespoon turmeric powder
  • 5 cups organic low-sodium chicken broth
  • 2 Tablespoons soy sauce
  • 2 Tablespoons natural peanut butter
  • 1 carrot, thinly sliced
  • 1 celery stick, thinly sliced
  • 4 boneless skinless chicken thighs, cubed
  • 150g of flat rice noodles

DIRECTIONS

  1.  Heat a large stock pot over medium-low heat. In a blender or food processor, puree the onion, garlic, ginger, chilis, and turmeric with a splash of chicken stock.
  2.  Add the puree to the stock pot and add the rest of the chicken broth, stirring to blend. Add the soy sauce and peanut butter, along with the carrot and celery, and bring to a boil.
  3.  Let the veggies cook for 2-3 minutes at a full boil before adding the cubed chicken. Bring the whole thing back up to a boil and cook for 8 minutes. Add the rice noodles and cook for an additional 2-3 minutes, until the noodles are al-dente.
  4.  Serve immediately- garnish with chopped peanuts, sliced red chili, and lime wedges as desired.
