My Journey to Healthy Eating with Weight Watchers

I have been so excited that Weight Watchers has given me the opportunity to try their 360 program for three months free. It has been such an easy program to follow. It is awesome that Weight Watchers has made some really great changes to their program to incorporate healthy eating more intrinsically. One of my favorite things is the ability to find simple and easy recipes within minutes, using their phone apps. I love that at the drop of a hat, I can go from, “What am I going to make for dinner?” to “Ohhhhh, ahhhhh, THAT looks good!” while standing in the middle of the grocery store and pushing my empty grocery cart.



I love trying out new recipes on the website! At the same time, I like to explore some of my favorite recipes and make some minor changes to lower my point values. One of my favorite recipes is the Mexican Sloppy Joe Recipe. I love Sloppy Joes! They are simple and easy to make, especially on those days that I am running the kiddo to soccer practice and picking up my niece from high school. I made a take-off of the traditional Sloppy Joe recipe the other night and it was a hit!



I have tried this recipe many times in the past and recently fell back in love with it. It is one of MANY recipes I have found while working on this program.


Mexican Sloppy Joes (6 points)

Serves 4


Ingredients:

4 small fat free flour tortilla(s), 6-inch

2 tsp olive oil

1 pound(s) uncooked extra lean ground chicken breast (I use extra lean turkey breast, when I can’t find chicken)

1/4 tsp table salt

1/4 tsp black pepper, freshly ground

1 1/2 cup(s) black bean and corn salsa

1/4 cup(s) fat free mayonnaise

1/4 cup(s) (sliced) uncooked red onion(s), chopped

2 tsp lime zest, grated

1 Tbsp fresh lime juice


Optional: I like to add a little cilantro and avocado to the top of the mixture. Also, I sometimes add a can of black beans and frozen corn if I want to stretch the recipe a little further.


Instructions:

Preheat the oven to 400°F. Place 4 (10-ounce) custard cups on a baking sheet. Spray the insides of the cups with nonstick spray. Gently press a tortilla into each cup. Bake until golden and crisp, about 8 minutes. Let the tortillas cool in the cups, about 2 minutes. Carefully transfer the tortilla cups to a plate.


Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the chicken, salt, and pepper; cook, breaking the chicken apart with a wooden spoon, until browned, about 6 minutes. Stir in the salsa and heat through, about 3 minutes.


Mix the mayonnaise, onion, lime zest (I use a cheese grater to zest, but you can use a citrus zester if you have one), and lime juice in a small bowl. Spoon about 3?4 cup chicken mixture into each tortilla cup and top each with 1 1?2 tablespoons of the mayonnaise mixture. Yields 1 filled tortilla cup per serving.


Oh Em Gee! This is so tasty!
