On Tuesday I posted 20 queso recipes you’ll crave long after Cinco de Mayo. Unfortunately this 5-minute spinach salsa queso didn’t make the list because I didn’t whip it up in time to include in the roundup. I blame it on a Snap Conference hangover and the winter weather Utah is currently experiencing.

You seriously won’t believe how easy this queso recipe is to make. And while you can make it in 5 minutes from start to finish (as long as your spinach is defrosted), it might be closer to 6 or 7 depending on your microwave and your cubing skills.

I’ll be honest—I was a little doubtful about the spinach in this spinach Salsa Queso but I needn’t be. It meshed really well with the other flavors and made me feel less guilty about eating more than a few chipfuls while photographing.

Our family eats chips and salsa like they’re their own food group. Our favorite tortilla chips are On the Border and my favorite store-bought salsa is the new Pace Restaurant-Style. Of course, I prefer to make this homemade fire roasted salsa whenever I can because it’s ridiculously good.

The way Nathan and my kids raved about this queso, I have a feeling it will become a permanent fixture on our family party menu. Do you think it’s too much to serve spinach salsa queso with game day spinach dip, sweet onion crack dip and cowboy salsa?

Need a last-minute Cinco de Mayo appetizer? Try this 5-minute spinach salsa queso dip. It's creamy, cheesy and totally addictive!

Ingredients
  • 1 (10-oz) package frozen chopped spinach, thawed and drained
  • 1 (16-oz) package Velveeta cheese
  • 1 (8-oz) package reduced fat cream cheese
  • 1 (16-oz) jar salsa
  • Chopped fresh cilantro (optional)
Instructions
  1. Cut Velveeta and cream cheese into cubed. Place spinach, Velveeta cheese, cream cheese and salsa in a large microwaveable bowl.
  2. Microwave on high 1 minute; stir. Continue microwaving and stirring for 1-minute intervals until cheese is melted and queso dip is hot. Fold in chopped cilantro.
  3. Pour into a serving bowl; garnish with fresh cilantro. Serve hot!
Notes
Slow cooker option (NOT a 5-minute option):

Place all ingredients in slow cooker and heat on low until cheese is melted (about an hour). Check occasionally as some slow cookers cook hotter and faster than others. Fold in chopped cilantro. Serve with your favorite tortilla chips.

* This is a great alternative for parties as it keeps the dip warm!
