Snickers Cookie Dough Bars….

Usually, on a Monday, you’d expect to see a meal planning Monday post but seeing as today is the first day of the Summer Holidays for us we’re changing it up a bit by sharing these delicious Snickers Cookie Dough Bars.

You can still see my meal planning Monday post over on my foodie blog but over here, I’m concentrating on snacks for the kids today as they seem to eat me out of house and home when they’re off school.  Yesterday I made a batch of these little beauties and a batch of my homemade packed lunch cake so I’m hoping that should keep them and their friends happy for a little while at least.

How to make Snickers Cookie Dough Bars

  • 2oog (2 cups) crushed chocolate digestives (for my US readers graham crackers work just as well)
  • 5 tablespoons butter, melted
  • 6 tablespoons white sugar (divided into two lots of 3 tablespoons)
  • 100g (1 stick) of butter, softened
  • 100g (1/2 cup) brown sugar
  • 1/4 teaspoon salt
  • 4 tablespoons milk, divided
  • 1 teaspoon vanilla essence or extract
  • 180g (1 1/2 cups)  plain / all-purpose flour
  • 400g (2 1/2 cups) chocolate chips
  • 5 48g snickers bars, chopped up into small pieces

Step 1: Add the crushed chocolate digestives to a medium mixing bowl. Mix in the melted butter and 3 tablespoons of the white sugar. Mix well. Line an 8×8 square pan (I use a silicone one which is so easy to get things out of) with parchment or wax paper and pack in FIRMLY into the pan. You may need to use the bottom of a measuring cup or glass to get a really firm base. Place in the fridge to set.

Step 2: Using an electric mixer, cream together the softened butter, brown sugar, the remaining 3 tablespoons of white sugar and the salt until it’s light and fluffy.

Step 3: Mix in 3 tablespoons milk and vanilla.

Step 4: Mix in the flour

Step 5: Fold in about 75g of the chocolate chips and 2 of the chopped up Snickers.  

Step 6: Take the biscuit base out from the fridge and press your Cookie Dough mixture onto the top of the base.

Step 7: Add remaining chocolate chips and 1 tablespoon of milk to a microwave-safe bowl and heat on low power until melted, checking on it frequently and stirring each time you do.  It burns really easily so keep a close eye and only heat in very short blasts.

Step 8: Pour melted chocolate on top of cookie dough and sprinkle over the remaining Snickers.

Step 9: Refrigerate for 1 hour. Cut into 16 squares and enjoy!

My lot love these Cookie Dough Bars and plan to try them with some other chocolate bars over the Summer.

Notes

I cut mine into 2-inch square but you could even make them smaller so they're more bite-size than bar size.
