Happy 4th of July! It's a gorgeous day here in New Jersey. I'm getting a late start on today's Menu Plan after spending some time at the gym this morning working off some of this holiday excess. Way too many mini cupcakes, frosted brownies, and lattes this weekend, but totally worth it! On the upside, I've been making healthy smoothies for breakfast each morning as part of the #dailyharvestchallenge.

Wednesday - Cheesy stuffed Mexican peppers
Thursday - Caprese pasta
Friday - Take out
Saturday - Grilled lemon Dijon chicken with a side of rice and roasted asparagus
Sunday - Buffalo chicken Cobb salad
