Menu Plan Monday :: 3.20.2017

I took a break from menu planning last week. It was a combination of being slightly burned out and having a crazy, up in the air week that didn't exactly lend itself to sticking to any sort of meal plan. But no fear! This week I am back in business and ready to get to it.

Here's what's on our plates this week:

Monday - Ravioli with a brown butter and sage sauce. This pasta is so rich and decadent. Use as much or as little sage as you like. I like to use cheese ravioli, but any kind of ravioli would be absolutely delicious!

Tuesday - One-pot chicken Alfredo penne. I am all about the one-pot meals lately. Not only are they super easy to make, but the clean up is a breeze!

Wednesday - Homemade baked mac & cheese with a side salad. What I love about this meal is how easily I can customize the mac & cheese. I bake them in individual ramekins because Emma doesn't like the bread crumb topping, but Harper does. So, I can easily please everyone!

Thursday - Baked potato soup. This soup is one of my favorites, but this will be the first time I tried the Skinnytaste recipe several months ago and was skeptical. This soup is very rich. To lighten it up is almost criminal. But Gina from Skinnytaste has hit a grand slam with her slimmed down version.

Friday - Dinner out or take out

Saturday - Mexican shredded chicken tacos. This recipe looks super easy. But if you are pressed for time or just want a short cut (that'll be me!), stop at the store and pick up a rotisserie chicken. You'll shave even more time off the meal preparation!

Sunday - Flank steak lettuce wraps. We are kicking off grilling season with one of our favorites. Top them however you like, but we love scallions, red pepper, cilantro, shredded carrots, and teriyaki rice.

Since giving up chocolate for Lent, I haven't been baking as much as I normally do. I have found an incredibly satisfying cookie for my insatiable sweet tooth. I cannot get enough of these.
