Recipe Intro
Here’s a great summer papaya salad. It works perfectly with leftover chicken. And the sauce is something else!
Papaya Chicken Salad w. Ginger Lime Tahini Dressing
- 2 cooked chicken breast
- 1 small papaya
- 2 carrots
- 3/4 cup finely cut red cabbage
- Mixed salad greens
- 2 spring onions
Ginger Lime Tahini Dressing:
- 2 tablespoons tahini
- 3 tablespoons lime juice
- 1-inch ginger, grated, juice squeezed, pulp discarded
- 2 tablespoons olive oil
- Salt and pepper
The process…
Look! It’s a papaya! Slice in half, scoop out the seeds, peel the skin, and cut the flesh into small bites.
Look! Real carrots! Peel them and slice thinly.
Cut the cabbage thinly as well as the spring onions. Wash and spin-dry the salad greens. Mix all the dressing ingredients in a blender or small food processor. Slice the precooked chicken breast thinly. Arrange the salad and top with the dressing.
