Baked Cauliflower w. Bacon and Olives
- 1 head cauliflower, chopped into florets
- 1 onion, roughly chopped
- 2-3 cloves garlic, pressed
- 1 red bell pepper, cut into bite-size pieces
- 8 pieces Crispy No-Fuss Bacon
- Fat drippings from the bacon
- 10-12 Kalamata olives, pitted and halved
- 2 teaspoons cumin
- 1/4 cup fresh parsley, finely choppped
- 1 cup prepared tomato sauce
- Salt and pepper
The process…
Prepare the bacon according to the Crispy No-Fuss Bacon recipe, keeping the fat drippings. Chop the cooked bacon into small pieces. Put these pieces, the bacon fat, and all other ingredients into a baking casserole. You don’t need very much salt because the bacon and olives are already salty.
Mix well and bake at 350°F for about 40 minutes or until the cauliflower is tender. You’ll need to stir the mixture 2 or 3 times while cooking and you might also need to add a small amount of water. The mixture should always be moist.
