Here’s a delicious way to impress your guests. This is one of my best recipe concepts!
Cucumber Avocado Trout Cold Soup
- 50 grams smoked trout
- 4 medium size cucumbers, peeled
- 1 small or 1/2 large avocado
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 bundle cilantro (or other herbs), finely chopped
- Salt and pepper
The process…
Peel and roughly chop the cucumbers. Put them in the blender with the trout, avocado, lemon juice, and olive oil. Blend well and taste, adding salt (if necessary), black pepper, and perhaps more lemon.
Add the fresh herbs and blend briefly. To serve, garnish with thin cucumber slices, a small piece of trout, and freshly milled black pepper. Drizzle with olive oil.
SERVES 2-4
