I recently posted my Healthy Oven French Fries, a kid-approved recipe, perfect for any parents struggling to get healthy vegetables into their young ones. Here’s a variation on the same theme. The spices are optional. Kids love this recipe. You can tell them that sweet potatoes are “orange potatoes.” It’s basically true. And if you find baby sweet potatoes at your local farmers’ market like the ones pictured below, do not hesitate. They taste even better than the already delicious bigger varieties carried by most supermarkets.

Sweet Potato Fries

  • 2 pound sweet potatoes
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 2 tablespoons coconut oil
  • 2 generous pinches sea salt
  • Freshly milled black pepper

The process…

Wash the sweet potatoes.

Peeling is not entirely necessary. Just try to remove any bits that don’t look appetizing.

Cut into French fry shapes. They might start to brown a little as they are exposed to the air. It’s no problem.

Add the cumin, coriander, salt, and pepper. Mix well. Next add the coconut oil and again mix well.

Distribute the sweet potato fries in a single layer on a baking sheet. You can line the baking sheet with parchment paper (optional). The single layer is important. Don’t stack them. Bake at 350°F for 30 minutes or until the fries become golden brown.

SERVES 3-4
