Diabetes is a very devious disease. For most of us, it happens so slowly that it's hard to tell things are changing. The cause of diabetes is also hidden in our environment or the Food we've always eaten. Genrally, we like our familiar surroundings and -- for the most part -- we love our "comfort foods". What could possibly be wrong with something made with our mother's love?
But I'm here to tell you that both our food and our environment have been changed in subtle ways over the past 50-100 years -- and with it, especially since one sweetener was added to nearly every thing we eat, we have begun growing fatter.
Our food looks pretty much the same as it always has, but -- when the levels of minerals it contains are analyzed -- we find the mineral levels have declined dramatically. We eat, not just for pleasure or to fill our stomach, but to get 60 specific minerals that are necessary for our body to function correctly and rebuild its wear and tear.
Farmers are pushed to produce more food and do it at lower cost, so they have dropped the old practice of feeding the soil with wood ashes, manure, and compost as they used to do. Our soil is over-worked and all the nutrients haven't been replaced, so or vegetables, grains, and fruit are all deficient, compared to what they used to contain.
(And we need some of those minerals to process all the sugar and carbs we are now eating.)
To make things worse, High Fructose Corn Syrup has replaced cane sugar for most uses in our food -- and it shows! If you look at pictures of Americans taken in the 1950s, -60s, and -70s, you'll see they are thinner and not so "inflated" or pudgy as they are now. As Dr. Robert Lustig points out in his lectures and books, HFCS is a totally different chemical than sucrose, which used to be used in our soft drinks and food.
So, things are different than they used to be -- and, if we want to become healthy again, we need to respond to the changes intelligently. Unfortunately, this usually costs a little more and requires us to look at the food labels and go to the trouble of cooking from scratch (basic raw ingredients) again, but it will save your life.
What is your life worth to you? What is the feeling of vibrant health and energy worth to you? We have a choice of going to relatively little extra trouble now each time we prepare or choose our food, or later when we come down with heart disease, kidney disease, neuropathy, or the need for amputations.
