Easy Chicken Lettuce Wraps

Prep Time – 15 min

Total Time – 25 min

Servings – 2-4

Ingredients:

  • 1 lb ground chicken
  • 1 tbsp coconut oil
  • 1 med red onion, finely chopped
  • 1 tbsp ginger root, finely chopped
  • 5 cloves of garlic, minced or finely chopped
  • 4 oz of fresh mushrooms, sliced
  • 1 small red pepper, diced
  • 3 tbsp of tamari sauce
  • 1 tsp of apple cider vinegar
  • 1 tbsp of chili sauce
  • 2 tbsp of cilantro, chopped
  • 4 green onions, chopped
  • 1 head of leaf lettuce

Instructions:

  1. Heat coconut oil in a skillet pan over medium heat, adding red onion and sauté until translucent.
  2. Add ground chicken and sauté for 5 mins while breaking up into small chunks.
  3. Add the rest of ingredients except the green onions and cilantro and cook until chicken is done.
  4. Once done, stir in the Chopped Green Onions and cilantro.

  5. Wash and separate lettuce. Add chicken mixture onto leaves and enjoy.
