Servings – 4 (about 20 balls)

Ingredients:

Instructions:

  1. Melt the coconut oil on low heat until liquid.
  2. Mix all other ingredients together, except for the shredded coconut, adding the melted coconut oil last.
  3. Put shredded coconut into a separate bowl. With hands, roll mixture into a 1 ½ inch ball and then coat them in the shredded coconut.
  4. Chill the bites in the fridge for 15 minutes before eating. Store them in the fridge for freshness and for keeping them firm. Lasts for a few weeks.
  5. These small power balls are perfect for between meal snacks or even as a meal replacement for anyone on the run. Enjoy!
