Cruciferous Side Salad

Prep Time – 5 min

Total Time – 10 min

Servings – 2

Ingredients:

  • 2 cups arugula (or baby bok choy)
  • 1 tomato cut into wedges (optional)
  • 3 tsp pine nuts or walnuts
  • 1 tsp olive oil
  • pinch of garlic salt
  • 3 tbsp freshly grated parmesan or pecorino romano

Instructions:

  1. Split arugula over two plates and add the tomatoes.
  2. Drizzle the olive oil and sprinkle with garlic salt.
  3. Add the pine nuts and finish off with the parmesan.
