The Perfect Lazy Day Homemade Vegetable Soup Recipe

What’s the best time of the year for you? Soup season is easily the best time of the year for me! Soup season has finally arrived with the cooler weather. I have plenty of my favorite soup recipes on hand and ready to add to my meal plan, and I couldn’t be happier!

I grew up eating different soups during this time of year, and my mom’s easy Vegetable Soup Recipe was always my favorite! 

My mom always made it on a perfect, lazy day too. It would be a chilly day or, a rainy fall evening when everyone wanted to cozy up and watch a movie while eating something warm. It pairs perfectly with a peanut butter and jelly sandwich, a movie, and family time. 

This recipe brings back a lot of wonderful memories for me!

My dad is very picky (thankfully, I’m not!), so my mom would omit several of the ingredients I have listed below. She would always leave out the ingredients, like onions, tomatoes, and spices! I have taken her recipe and re-vamped it with what I consider all the good stuff!

Vegetable soup is my favorite type of soup because you can really add (or not add) whatever you like to this soup to make it your own creation!

What Can Go Into a Vegetable Soup Recipe?

If you research vegetable soup, it’s exactly what it sounds like- packed full of vegetables! Some people like to do a meat base, others like to only do vegetables. I prefer to use ground beef or venison (deer meat) in mine to add some meat to it. It adds a great flavor! I think whatever your choice of meat is will work fine. 

I’ve added many different vegetables to this recipe. It can include just about any vegetables you like- carrots, corn, green beans, onions, okra, diced potatoes, and more! In the recipe, I have added the vegetables that I use most often. 

To get started With THis Recipe, you’ll need a few tools:

  • Saucepan– These nonstick pans are my favorite & they’re pretty!
  • Cutting Board– These are great because they’re colored to cut different foods on each of them.
  • Knife
  • Spatula
  • Can Opener
  • Measuring Cups
  • Measuring Spoons

Ingredients

  • 1 LB Ground Beef, Turkey, or other meat
  • 1 Small Onion
  • 2 14.5 Ounce Cans of Beef Broth or Vegetable Broth
  • 1 Can Whole Kernel Corn, drained
  • 1 Can French Style Green Beans, drained
  • 1 Can Italian Style Stewed Tomatoes, drained
  • 1 Cup Water
  • 2 Cups Bow Tie Pasta
  • 2 Tsp Basil
  • 1 Tsp Oregano
  • 1/4 Tsp Garlic Powder with Parsley
  • Salt & Pepper to Taste

Steps to Cook This Delicious Vegetable Soup

Step 1. Cook the Meat

Start by browning the ground beef over medium heat. Drain the grease.

Step 2. Add the Ingredients

While the meat is cooking, cut the onions into small pieces so they can soften up while cooking. Add the broth, onions, corn, green beans, tomatoes, water, and herbs (fresh herbs or dry herbs are fine) to a large pot.  

Step 3. Let the Soup Cook

Bring the soup to a boil to let the juices from the vegetables create the amazing flavor of the soup. Let it boil for 10-15 minutes. 

Add the noodles in the last few minutes of boiling. 

Turn the heat to low to let the soup cool to the perfect temperature until you are ready to eat the soup.

Look at this beautiful, colorful mixture (insert heart eyes)!

Now, it is time to grab a hearty bowl of vegetable soup and enjoy your perfect lazy day!

Notes

  • If you don’t have Italian-style stewed tomatoes, you can use regular stewed tomatoes and add some Italian seasoning. 
  • This homemade vegetable soup recipe can also be made in a slow cooker. I love using this method on a busy day so that it’s ready for us whenever we want to eat!
  • ​If you don’t have noodles or don’t want to add them, the vegetables and beef are filling without them. I have made this recipe with and without noodles and both ways are tasty and filling. 
  • You can add more water or beef broth if the soup is too chunky.
  • You can add other vegetables that you’re family would like! You can do almost anything with this soup, and it will still taste amazing.
  • The leftover soup reheats very well and will make the perfect lunch or dinner for a second night in a row!
