Recipe: Apple Galettes

Ingredients

  • frozen puff Pastry (either 5x5 pieces or large sheets)

  • 4 medium sized Granny Smith apples, peeled and thinly sliced

  • 1/2 cup biscuit crumbs (Digestive biscuit/vanilla wafer type cookie)

  • 3 tbsp butter, melted

  • 1/3 cup (about 6 tbsp) apricot jam or marmalade

Instructions

Preheat oven to 425ºF (218º C)

  1. Roll the 5x5 sheets to 6x6, or a larger roll to a slightly thinner dough.

  2. Use a 6" diameter saucer or bowl as a guide and cut the dough (or you can make them square.)

  3. Place the pastry on a cookie sheet lined with a silicone sheet or parchment paper, and sprinkle one tablespoon of biscuit crumbs onto the center of the circle.

  4. Begin placing the apple slices (use 1/2 apple per pastry) in a circular pattern, leaving a small edge of pastry to form a crust. Brush apple slices with butter.

  5. Bake for about 20 minutes or until pastry is lightly browned and crisp and apples are tender.

  6. Don't worry about making them look perfect, they'll look great when they're all done. In small saucepan, over low heat, warm the jam or marmalade until melted, then brush over the apples while still warm.

  7. Serve the individual Apple Galettes with fresh whipped cream or vanilla ice cream, if desired.
