RECIPE: SUGAR COOKIE BARS RECIPE

We love these Sugar Cookie Bars! They are so delicious and easy to make. They are perfect for when you need to bring a dessert to a family party or get together. They taste just like your favorite Sugar Cookie but without all the work of rolling them out!

Now, I am not a big fan of frosting. I like to have just a thin little line of frosting to add a little bit of flavor to my Sugar Cookie Bar. So when I make them, I only add a little bit of frosting. But I realize that there are some of you who are frosting lovers. You can pile the frosting as thick as you want to make it just right for you and your taste preferences.

Go ahead and whip some of these up…I think you are really going to like them. Tonight is a great night to test them out…even if you don’t have anyone to share them with.

Sugar Cookie Bars

Cookie Bars:

3/4 cup butter, room temperature

1 cup granulated sugar

1 egg

1 egg white

1 1/2 Tbsp sour cream

1 tsp vanilla extract

1/4 tsp peppermint extract

2 1/2 cups all-purpose flour

1/2 tsp baking powder

1/2 tsp salt

3/4 cup chocolate chips

Peppermint Frosting:

1/4 cup salted butter , softened

2 cups powdered sugar

2-3 Tbsp half and half

1/2 tsp vanilla

1/4 tsp peppermint extract

crushed candy canes

Instructions:

  1. Preheat oven to 375 degrees.
  2. Butter a 13″ x 9″ baking dish, set aside.
  3. In a mixing bowl combine flour, baking powder and salt, set aside.
  4. In the bowl of an electric mixer, whip together butter and sugar until light and fluffy about 3-4 minutes.
  5. Mix in the egg and the egg white until well combined.
  6. Add sour cream, vanilla and peppermint extract and mix until blended.
  7. Slowly add dry ingredients and stir until combined.
  8. Mix in chocolate chips.
  9. Grease a spatula and gently press cookie bar mixture into greased baking dish.
  10. Bake 15 – 17 minutes on 375 degrees until toothpick inserted into the center comes out clean. Do not overcook.
  11. Cool completely, frost and cut into squares.

Frosting:

  1. In a mixing bowl, with an electric mixer, whip together butter and powdered sugar and half and half until fluffy.
  2. Stir in vanilla and peppermint extract.
  3. Whip together until fluffy.
  4. Spread onto the cooled cookie bars.
  5. Sprinkle the frosting with crushed candy canes.
