Vanilla 3-Layer Cake in the Microwave



Ingredients:


  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon Vanilla extract
  • Food coloring (optional)


Instructions:


  1. In a large Bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, beat the butter and sugar together until creamy.
  3. Add the eggs to the butter mixture, one at a time, beating well after each addition.
  4. Gradually mix in the flour mixture, alternating with the milk and vanilla extract.
  5. If desired, add a few drops of food coloring to the batter and mix well.
  6. Grease three microwave-safe bowls with cooking spray and divide the batter evenly among them.
  7. Microwave each bowl on high for 3-5 minutes, or until a toothpick inserted into the center of each cake comes out clean.
  8. Allow the cakes to cool before stacking and frosting with your favorite frosting.
