Tuna Penne Pasta {recipe}

Tuna Penne (which we usually call “Tuna Penne Pasta” — redundant, I know) is a family favorite.  It’s easy enough that kids can do it, and uses mostly pantry ingredients, making it a good last-minute meal option.  But before we get to the recipe, let’s talk about ingredients — specifically, Wild Planet’s high-quality canned meats.

Wild Planet

Wild Planet is best known for their seafood.  Like the tuna we used in our recipe.  Tuna, salmon, and sardines are probably the best-known products in the line, but mackerel, shrimp, anchovies, and yellowtail are also available.  These are wild-caught, not farmed (so no weird feed or dyes), and line-caught, so the products are dolphin-safe.  Nothing weird or junky is added — the fish is in water or olive oil (depending on which product you choose), and may include sea salt or a dash of lemon.

They’ve recently introduced a canned chicken, and as they say, “you’ve never tasted canned chicken like this before!”

They’re not exaggerating.  It sounds silly to put it this way, but it’s like “chicken in a can” vs. “canned chicken.” It’s not mostly-ground-up chicken smooshed into a can and all watery.  It’s a big ole hunk of chicken smashed into the can.  As in, I had to break it up with my fork so it would even come out, because it’s a chunk of chicken, not all shreddy.  The flavor was delicious, and it was moist and tender even after I microwaved it.  (I know, not the best way to cook chicken, but I needed a quick snack!)  (The photo is from before I heated it up, so pardon the slightly-gelled juices.)

Since superior ingredients make superior food, Wild Planet tuna is an excellent choice for this Tuna Penne recipe.  I don’t remember where I originally got the recipe, but I didn’t create it myself.  It’s a family staple now, though.

Tuna Penne Pasta

Ingredients
  • extra virgin olive oil
  • 4 lg. cloves garlic, minced
  • 1 Tbsp. Italian seasoning
  • ½ tsp. basil
  • ¼ tsp. onion powder
  • ¾ tsp. black pepper
  • pinch sea salt
  • pinch crushed red pepper (SMALL pinch unless you like really hot)
  • 2 sm. cans or 1 lg. can tuna (Do not drain.)
  • 4 Tbsp. butter (1/2 stick)
  • 8 oz. tomato sauce
  • 1 lb. whole wheat or brown rice penne (obviously use the rice version if you need gluten-free)
Instructions
  1. Put a pot of water on to boil for the pasta.
  2. Pour olive oil into a skillet to coat thickly. Add garlic and turn the heat onto low. Add Italian seasoning, basil, onion powder, salt, black and red peppers. Stir. (Have these seasonings ready, or you're liable to burn your garlic and burnt garlic is gross.)
  3. Add tuna, including its liquid, butter, and tomato sauce. Stir until well-mixed, and cook until the sauce is heated through.
  4. Meanwhile, cook the penne. Drain well and return to the pot. Mix in sauce, and serve.
Notes
You can double or triple the sauce and freeze it for later use. In this case, it's about 2 cups per batch.
