Cinnamon Streusel Coffee Cake

I used to bake this Cinnamon Streusel Coffee cake when I was in middle and high school. Neighbours on our compound would often come over for a visit and some coffee or tea. My mom liked how I was always eager to bake a treat for them!

When I was a kid and I would read about coffee cakes in American cookbooks, I always thought they were coffee-flavoured. I asked my mom why there wasn’t any coffee flavouring in these cakes. We both grew up with fancy German tortes, many of which had coffee or mocha flavouring. Eventually we realized that when these American recipes talked about ‘coffee cakes,’ they meant cakes that you eat with a cup of coffee, not coffee-flavoured cakes. Very confusing! Now, of course, we can look up almost anything online. Wikipedia denotes the difference based on where the cake comes from. A thirteen-year-old me would have found this very helpful!

Serve this cinnamon Streusel Coffee Cake with tea or coffee, and a big dollop of whipped cream. Ice cream would work nicely as well.

The streusel in this recipe calls for cinnamon and walnuts. You could also substitute chopped almonds or macadamia nuts for the walnuts, and add some ground nutmeg or cardamom.

When you spread the cake batter in the pan, don’t worry if you can’t get it 100% even. The cake will rise a lot in the oven and everything will work itself out. As it’s baking, this cake gives off the most mouth-watering aromas; your kitchen will smell like heaven!

Cinnamon Streusel Coffee Cake

Ingredients

Streusel

  • 1/2 cup brown sugar packed
  • 2 Tbsp flour
  • 2 tsp cinnamon
  • 2 Tbsp butter melted
  • 1/2 cup walnuts chopped

Cake

  • 3/4 cup brown sugar packed
  • 1/4 cup butter softened
  • 1 egg large
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

For the Streusel

  • Mix together all the streusel ingredients and set aside.

For the Cake

  • Grease and flour a 9" square baking tin, or line with parchment.
  • Preheat oven to 375 F.
  • Beat together the brown sugar and butter until light and fluffy.
  • Add the egg and vanilla and beat well.
  • Stir in the milk.
  • Sift together the flour, baking powder, and salt. Stir this dry mixture into the butter and sugar mixture.
  • Spread half the batter in the pan. Evenly sprinkle with half the streusel mixture.
  • Carefully spread the remaining batter over the streusel. Sprinkle remaining streusel on top.
  • Bake for 25-30 minutres, or until a wooden skewer inserted in the centre comes out clean.
  • Let cool and cut into 9 squares.
  • Serve with coffee (or tea).
