What’s in season?
Fennel is a highly aromatic, crunchy and slightly sweet bulb-like plant in the carrot family. Shaved raw Fennel bulbs or stems add assertive flavor to salads, chopped up greens can be used as garnish.
What’s so good?
- Fennel aids in digestion, it helps relieve gas, bloating, constipation, and cramps.
- Grapefruit is a rich source of vitamin C that reduces inflammation and boosts collagen production.
- Quinoa is gluten-free and high in magnesium which helps depression by raising levels of the mood-boosting serotonin.
Grapefruit, Fennel and Quinoa Salad
- 1/2 cup cooked quinoa
- 1/2 cup lettuce (or other leafy greens), washed, dried, chopped
- 1/2 avocado, pitted
- 1/2 pink grapefruit
- 1 tablespoon olive oil
- Salt and pepper to taste
1. In a medium bowl, combine Quinoa, greens, thinly sliced fennel and avocado.
2. Using a sharp knife, cut the skin off the grapefruit; slice between membranes to release segments into the salad bowl.
3. Squeeze juice from leftover membranes into another small bowl; add oil and season to taste with salt and pepper.
4. Drizzle the salad with dressing and enjoy!
