This simple and healthy breakfast incorporates one of my favorite seasonal ingredients, Rhubarb. It’s a perfect beginning for a busy work day because it’s so quick to make and yet it’s very filling and nutritious to power me through any creative challenges.
To start, you make a bowl of oats to your own taste – I used a cup of old-fashioned rolled oats and cooked them with water in the microwave. Meanwhile, sauté 2/3 cups of diced rhubarb, 2 tablespoons of maple syrup and 1 tablespoon of butter for about 5-7 minutes until cooked. Top your oats with 1/2 cup of yoghurt and the Maple Rhubarb mix. Enjoy!
You can make this bowl with other grain of your choice, for example quinoa, farro, or millet. Try adding strawberries to the rhubarb mix for extra sweetness, or opt in for a fruit flavored yoghurt.
