Southern Stewed Chicken and Rice Recipe

Don’t you just want a hearty, comforting meal on a relaxed, cozy fall night, like this southern-style Chicken stew from ThatGirlCanCook! on YouTube? This recipe has been a staple in my kitchen and a go-to whenever I need something invigorating for my family. It’s also a filling and best served over hot steaming rice or mashed potatoes; the choice is yours. Watch the video below to learn the step by step instructions.

Ingredients:

  • 2 lb skinless chicken thighs
  • 1/4 cup vegetable oil (or canola oil)
  • 1 tbsp butter
  • 1 medium yellow onion, chopped
  • 1 small bell pepper, chopped
  • 1 stalk of celery, chopped
  • 1 tsp badia complete seasoning
  • 1 bay leaf
  • 4 cups of chicken broth
  • 1/2 cup water
  • 1 tbsp cornstarch
  • 2 tbsp heavy whipping cream (optional)

Chicken Seasonings:

  • 1 tbsp olive oil
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp seasoned salt
  • 1 tsp ground black pepper
  • 1/2 tsp dried thyme

Directions:

Step 1

Place the chicken thighs in a large bowl. Drizzle 1 Tbsp olive oil and season with 1 tbsp onion powder, 1 tsp garlic powder, 1 tbsp seasoned salt, 1 tsp ground black pepper, and 1/2 tsp dried thyme. Mix together to combine and set aside. Next, in a large heavy bottom pot over medium heat, add 1/4 cup of vegetable oil. Once heated, sear the chicken on both sides until browned. Once done, remove and set aside. In the same pot, melt 1 tbsp butter, then add the chopped onions, bell pepper, and celery. Saute for a few seconds, then add 1 heaping tbsp of cornstarch.

Step 2

Once the cornstarch is cooked, add 4 cups of chicken broth and deglaze the pan. After this, add the chicken back to the pot and add 2 tbsp heavy cream. Mix, then reduce the heat between low and medium. Season with ground black pepper and 1 tsp badia complete seasoning, then add 1 whole bay leaf. Lastly, add 1/2 cup of water, and cover the pot with its lid. Cook for 20 minutes, then remove the lid and cook for a further 20 to 30 minutes. (Stir occasionally to prevent sticking and burning.) Serve over hot steaming rice or mashed potatoes.
