Easy-to-Make Soft & Chewy Sugar Cookie Bars

Ingredients

Sugar Cookie Bars

  • ½ cup salted butter, at room temperature
  • 1¼ cups granulated sugar
  • ⅓ cup sour cream
  • 1 egg
  • 2 tsp vanilla extract
  • ½ tsp almond extract, optional
  • 2¼ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt

Frosting

  • 1½-2 cups powdered sugar
  • ¼ cup melted butter
  • 2 tsp milk
  • 1 tsp vanilla

Directions:

Step 1

Preheat your oven to 350°F, then lightly grease a 9×13-inch baking pan with nonstick cooking spray or butter, and line it with parchment paper. In a large mixing bowl, add the butter and sugar, then beat them for about 3 to 4 minutes until light and creamy.

Step 2

Add the sour cream, egg, vanilla, and almond extract, then beat them together until combined, and make sure to scrape down the sides as needed. Now, add the flour, baking powder, and salt, then mix everything until combined and a slightly soft dough starts to form.

Step 3

Transfer the dough to the prepared baking pan, then spread it evenly, and place it in the preheated oven. Allow it to bake for about 15 to 18 minutes or until the edges are lightly brown making sure not to overbake. Set it aside and let it cool completely while preparing the frosting.

Step 4

In another mixing bowl, add the powdered sugar, melted butter, milk, and vanilla, then beat them until combined, smooth, and fluffy, and transfer the frosting on top of the cooled cake. Spread it evenly on top until covered, then add sprinkles, and let the frosting completely set. Serve and enjoy!
