Instructions

Step 1:

In a mixing bowl or the bowl of a stand mixer, add softened cream cheese and softened butter and beat on medium-high speed for about 1 1/2 to 2 minutes until smooth.

Step 2:

Add the peppermint and vanilla extract and mix again for another 1 to 1/2 minutes.

Step 3:

Turn the speed to low and add the Powdered Sugar 1 cup at a time. Make sure to mix after each addition. Once all powdered sugar has been added, turn the speed to medium-high and continue mixing for 1 more minute.

Step 4:

Divide the cream cheese mixture into 4 bowls.

Step 5:

Add 2 to 6 drops of one color to the first bowl, and mix until there are no streaks. Repeat with the remaining colors and bowls. Cover each with plastic wrap and chill in the refrigerator for an hour.

Step 6:

Add 1 cup of powdered sugar to a medium mixing bowl, then prepare the baking sheet by lining it with parchment paper. Sprinkle dusting powdered sugar onto the parchment paper.

Step 7:

Using a 1-tablespoon cookie scoop, scoop the cream cheese mixture, and roll it into a ball. Slice the rolled ball in half and roll each into smaller balls. Roll them in the powdered sugar. Place them on the prepared baking sheet.

Step 8:

Using your fork, gently press the coated ball with the tines. You can dip the fork in the powdered sugar if it sticks to the ball. Continue the process until all colors are coated and pressed.

Step 9:

Allow them to dry on the coated parchment paper for at least 4 hours. If you are in a humid place, once the tops of the mints are dried, turn them over and transfer them to a drying rack to allow the softer side to finish drying.
