Slow-Cooked Pork Casserole Recipe

Ingredients:

  • 2 tbsp sunflower oil
  • 1.1 lb diced pork shoulder
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp celery salt (optional)
  • 1 onion, peeled and chopped
  • 12 baby mushrooms, halved
  • 2 carrots, peeled and chopped
  • 1 cup hard cider
  • 1 3/4 cups chicken (or vegetable) stock
  • 1/2 tsp dried thyme
  • 1/2 cup bacon lardons (or chopped streaky bacon), fried
  • 1 tbsp cornstarch mixed with 3 tbsp cold water
  • 1/4 cup double cream
  • 2 tbsp freshly chopped parsley

Directions:

Step 1

Preheat your oven to 325 degrees F. Next, add 2 tbsp sunflower oil to a large pot over medium heat. Once heated, add the diced pork and season with 1/4 tsp salt, 1/4 tsp ground black pepper, and 1/4 tsp celery salt. Brown the meat on all sides for about six to eight minutes. After this, turn the heat down to medium, then add the diced onions. Continue to cook until the onions softened, then add the halved baby mushrooms. Cook for another two minutes. Next, add the carrots, 1 cup hard cider, 1 3/4 cups chicken, and 1/2 tsp dried thyme. Stir and deglaze the pan.

Step 2

Bring the pot to a simmer, then place the lid on the pot and place it in the oven. Cook it in the oven for about two and a half hours, or until the pork is tender. Once done, remove the pot from the oven and add the slurry to thicken it (1 tbsp cornstarch mixed with 3 tbsp cold water). Lastly, stir in 1/4 cup double cream. Serve with mashed potatoes and garnish with the fried bacon.
