Easy-to-Make Gooey Rocky Road Cookies

Cookies are one of my absolute favorite treats of all time and they are so delicious that I can eat them every day. Whenever I’m craving gooey, chocolatey, and tasty cookies, I always follow this recipe by Sugar Spun Run on YouTube. It is very easy to follow and it is filled with lots of chocolate chips, nuts, and marshmallows. Watch this video tutorial now and learn how.

Ingredients:

  • 1 cup unsalted butter, melted
  • ½ cup natural cocoa powder
  • ½ tsp instant coffee, optional
  • 1¼ cups light or dark brown sugar, firmly packed
  • ½ cup granulated sugar
  • 1 large egg + 1 large egg yolk, at room temperature
  • 1½ tsp vanilla extract
  • 2¼ cups all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • 2 cups mini chocolate chips, divided
  • 1 cup almonds, chopped
  • 1½ cups mini marshmallows

Directions:

Step 1

Preheat your oven to 175°C or 350°F, then line a baking sheet with parchment paper, and set it aside. In a large mixing bowl, add the butter, cocoa powder, and coffee, stir them until well combined, and then add the sugars, egg, egg yolk, and vanilla extract. Continue to stir until combined, then in a separate medium-sized bowl, add the cornstarch, baking powder, baking soda, and salt, and whisk them until incorporated. Gradually add the flour mixture, stir them well between each addition, and continue to mix until combined.

Step 2

Add 1 cup of mini chocolate chips, chopped almonds, and mini marshmallows, then gently fold them together until evenly distributed, and scoop them into 1½ tablespoons scoops. Gently roll each scoop in between your palms into a ball, then roll each ball into the remaining mini chocolate chips, and place them on the prepared baking sheet spacing them at least 2 inches apart from each other. Place them in the preheated oven, then let them bake for about 8 to 10 minutes, and allow them to cool completely before serving. Enjoy!
