Easy Corn Dog Casserole Recipe (State Fair Food Copycat)

State fair food is so delicious and addicting that I can eat it every day, but since I can’t go to a state fair every day or any time I want, I just learned how to make my favorite food at home with the help of this video tutorial by Catherine’s Plates on YouTube. It was one of the best decisions I’ve ever made because now I can eat a delicious Corn Dog Casserole any time I want.

Ingredients:

  • (8 pieces) package of hotdogs, cut into ½-inch pieces
  • ½ medium yellow onion, diced
  • 1 tbsp of butter
  • ½ tbsp of mustard
  • 1/8 tsp of salt
  • 1/8 tsp of pepper
  • (8.5-ounce) box of corn muffin mix
  • 1/3 cup of milk
  • 1 large egg
  • (4-ounce) can of diced green chilies, optional
  • 6 ounces of shredded cheddar cheese, divided

Directions:

Step 1

Preheat your oven to 400°F, then grease an 8×8-inch baking dish with nonstick cooking spray, and set it aside. Place a medium-sized skillet on a stove over medium heat, then add the butter, let it melt, and add the diced onion.

Step 2

Saute them until softened before adding the sliced hotdogs, then fry and cook them for about 5 minutes or until nice and crispy, and turn the heat to low. Add the mustard, then give them a good stir until well coated, and then turn off the heat.

Step 3

In a medium-sized bowl, add the corn muffin mix, milk, egg, green chilies, and half of the cheddar cheese, then add ¾ of the cooked hotdogs and onions, and give them a good mix until well combined. Pour the mixture into the prepared baking dish, then pour the remaining hotdogs and onions all over the top, and sprinkle the remaining cheese on top as well.

Step 3

Place it in the preheated oven, then let it bake for about 20 minutes or until a toothpick inserted at the center comes out clean. Once done baking, garnish it with sliced green onions, then serve it with ketchup, mustard, and French fries on the side, and enjoy!
