Easy Southern-Style Creamy Corn Casserole Recipe

If you love corn casserole but are not very fond of using a boxed mix, then check out this recipe by The Anthony Kitchen on YouTube, and learn how to prepare this from scratch using real corn kernels. This dish is so good and can be shared with the whole family, I guarantee you they’ll love this, and they will thank you for a very satisfying meal.

Ingredients:

  • 2 (16-ounce) cans of whole kernel corn, strained
  • 6 tbsp of unsalted butter, divided
  • yellow onion, finely diced
  • 1¼ cup of heavy cream
  • (8-ounce) package of cream cheese, softened
  • 1 large egg, slightly beaten
  • 2 tbsp of granulated sugar
  • 1½ tsp of kosher salt
  • ½ tsp of black pepper
  • ¾ cup of crushed Ritz crackers
  • 1½ cups of freshly grated Cheddar or Colby Jack cheese

Directions:

Step 1

Strain the corn kernels and discard all of the juices or reserve them for other recipes you want, then add the drained corn kernels to a blender or food processor, and pulse them until smooth and puree consistency. Place a pot on a stove over medium-high heat, then melt some butter, and saute the chopped onion until translucent. Add the cream followed by the cream cheese, then stir them together until melted and creamy, and turn off the heat. Remove the pot from the stove, then add the sugar, salt, pepper, and egg, and give them a good mix until combined.

Step 2

Add the corn, then continue to mix until well combined, and transfer them to a baking dish spreading it evenly. Crush the Ritz crackers, then add in the melted butter, and give them a good mix. Top the filling with lots of cheese until covered, then sprinkle the crushed crackers all over the top as well, and place it in a preheated oven. Allow it to bake at 325°F for about 30 minutes while covered with aluminum foil, then remove the foil, and continue to bake uncovered for 15 more minutes until the crackers are nice and toasted. Let it sit on the counter for about 15 minutes, then serve, and enjoy!
