How to Make a Classic Blueberry Pie from Scratch

Pies are one of my favorite kinds of pastry and I bake them all the time and on special occasions, too! But, if you can’t decide on which pie flavor to bake, then you can never go wrong with a classic recipe, just like this blueberry-flavored pie by Betty Crocker on YouTube. It’s so good that one bite won’t be enough, so share this with your family, and expect clean plates because this pie is that delicious.

Ingredients:

Pastry

  • 2 cups of all-purpose flour
  • 1 tsp of salt
  • 2/3 cup of shortening
  • 4 to 6 tbsp of cold water

Filling

  • ¾ cup of sugar
  • ½ cup of all-purpose flour
  • ½ tsp of ground cinnamon, if desired
  • 6 cups of fresh blueberries
  • 1 tbsp of lemon juice
  • 1 tbsp of butter, if desired

Directions:

Step 1

In a medium-sized mixing bowl, add the flour, salt, and shortening, then mash and mix them together using a pastry blender until the chunks are pea-sized small, and then add the cold water 1 tablespoon at a time making sure to give the mixture a good toss using a fork in between each addition. Gather the mixture into a dough ball, then divide it in half evenly, and shape them into 2 flat rounds on a lightly floured surface.

Step 2

Wrap them with plastic, then place them in the refrigerator to chill for about 45 minutes or until firm and cold, and preheat your oven to 425°F once your dough is almost ready. Take the dough out of the fridge, then using a floured rolling pin, roll one dough into a 2-inch larger than an upside-down 9-inch pie plate, and place it into the plate pressing firmly at the bottom and the sides.

Step 3

In a large mixing bowl, add the sugar, all-purpose flour, and cinnamon, then give them a good mix, add the blueberries, and continue to stir them until well mixed. Transfer them to the prepared pie plate, then drizzle the lemon juice, and add the cut butter pieces all over the top. Place the other round dough on top, then cut some slits, and seal the sides nicely.

Step 4

Cover the edges with a piece of aluminum foil to prevent them from being burnt, then place the pie in the preheated oven, and allow it to bake for about 35 to 45 minutes or until the crust is golden and the filling begins to bubble through the slits on the crust. Remove the foil at the last 15 minutes or the baking time, then once done, let it cool on a wire rack for at least 2 hours, and serve. Enjoy!
