Creamy Chipotle Tuna Casserole Recipe

This casserole recipe from Views on the road on YouTube is nothing short of delicious! It’s one of my favorite casserole recipes, and I frequently make this for my family. Ingredients:

  • 2 cans of tuna
  • 12 oz egg noodles
  • 3 chipotles (in adobo sauce), seeds removed and chopped
  • 1/2 of an onion, diced
  • 2 green onions, chopped
  • a bunch of cilantro, chopped
  • 2 garlic cloves, minced
  • 1/4 cup of tomato sauce
  • 1/2 tbsp Mexican oregano
  • 1 tsp ground black pepper
  • 3 1/2 cups of cold milk
  • 1 cup of shredded mozzarella cheese
  • 2 tbsp tomato chicken bouillon
  • 1 1/2 tbsp all-purpose flour
  • optional topping: 1/4 cup of cotija or parmesan cheese, melted butter, 1/2 cup panko breadcrumbs, crema fresca, chives

Directions:

Step 1

Preheat your oven to 375 degrees F, bring a pot of salted water to a boil, and cook the egg noodles according to the package instructions. Next, prep and chop your ingredients accordingly and set them aside. After this, melt some butter in a saucepan, and saute your onions and garlic. Season with a pinch of salt and continue to stir for two to three minutes. Then, add 1 1/2 tbsp all-purpose flour and cook for a further 40 seconds. Next, add 3 1/2 cups of cold milk. Mix it frequently to avoid lumping and let it come to a boil. Once boiling, add 1/4 cup of tomato sauce, 2 tbsp tomato chicken bouillon, 1/2 tbsp Mexican oregano, chopped chipotle, and 1 tsp ground black pepper. Lower your heat to low and mix everything well. Once done, turn off the heat and incorporate 1 cup of shredded mozzarella cheese.

Step 2

Next, combine the panko breadcrumbs, melted butter, and cotija cheese in a small bowl and set it aside. Now, transfer the drained egg noodles to a large bowl, then add the sauce, tuna, green onions, and cilantro. Gently fold everything together, then transfer the mixture to a buttered casserole dish. Spread evenly and sprinkle the panko crumb mixture over. Place this in the preheated oven and bake for 25 to 30 minutes. Serve and enjoy!
