Best Fall Potluck Casserole

Ingredients:

  • 1 tbsp butter
  • 1/2 large sweet onion, diced
  • 2 tsp minced garlic
  • 2 lb ground turkey
  • 1 tsp kosher salt
  • 3/4 tsp poultry seasoning
  • freshly ground black pepper, to taste
  • 1 lb butternut squash, diced
  • 8 oz frozen spinach, thawed, squeezed dry, and chopped
  • 8 oz frozen hashbrown potatoes
  • 2 tbsp all-purpose flour
  • 1 1/2 cups of milk
  • 1/2 cup shredded parmesan cheese, divided

Directions:

Step 1

Preheat your oven to 400 degrees F and grease your casserole dish with some cooking spray. Set it aside. Next, prep and chop the ingredients accordingly, then set them aside. Once done, combine the chopped squash, spinach, and hashbrown potatoes in a large mixing bowl. After this, melt 1 tbsp butter in a pan over medium-high heat, saute the onion until translucent, then add the minced garlic, and ground turkey. Continue cooking and season with 1 tsp kosher salt, 3/4 tsp poultry seasoning, and ground black pepper to taste. Mix everything well until the meat browns.

Step 2

Once the meat browns, add 2 tbsp all-purpose flour and mix, making sure the meat is coated well. After this, add 1 1/2 cups of milk and bring everything to a simmer, stirring frequently. Once the sauce thickens, turn off the heat and add 1/4 cup of Shredded Parmesan Cheese. Transfer the turkey mixture to the squash mixture and combine. Now, transfer the mixture to your prepared casserole dish and cover it with aluminum foil. Place it in the preheated oven and bake for 30 minutes. After 30 minutes, remove the foil, and bake for a further 2o minutes. Garnish with the remaining shredded parmesan cheese and serve.
