Easy Peach Cobbler Cheesecake Recipe

Ingredients:

Cobbler Topping:

  • 3 peaches
  • 1 cup white sugar
  • 1 tsp cinnamon
  • 1 tbsp melted butter
  • 1/4 tsp nutmeg
  • a pinch of salt
  • 1 shot of cognac
  • 1 tsp vanilla extract
  • 2 1/2 tbsp cornstarch (mix with 1/2 cup water)

Crumble:

  • 3 3/4 cup golden grahams
  • 2 tbsp melted butter
  • 1/2 cup white cake flour
  • 1/3 cup brown sugar

Crust:

  • 1 box graham cracker crumbs (3 cups)
  • 1/2 tsp cinnamon
  • a pinch of salt
  • 1/4 cup white sugar
  • 2 sticks melted butter

Cheesecake:

  • 5 blocks of cream cheese, room temp
  • 1 3/4 cup white sugar
  • 2 tbsp all-purpose flour
  • 1 1/2 tsp vanilla extract
  • 5 whole eggs and 2 egg yolks, room temp
  • 1/3 cup whipping cream
  • 1 tsp lemon zest

Directions:

Step 1

To start, peel and roughly chop your peaches into small pieces. Next, heat your saucepan over medium heat and melt 1 Tbsp Melted Butter. Once melted, add the peaches, 1 cup white sugar, 1 tsp cinnamon, 1/4 tsp nutmeg, and 1 tsp vanilla extract. Mix well. Once the peaches start to caramelize, add a pinch of salt and 1 shot of cognac. Stir everything well. To thicken the mixture, add 2 1/2 tbsp cornstarch mixed with 1/2 cup water. Bring it to a low simmer. Once it thickens, transfer the mixture to a mixing bowl and pop it into the fridge for 15 to 30 minutes.

Step 2

Now, for the crumble, add 3 3/4 cups golden grahams, 1/2 cup white cake flour, 2 tbsp melted butter, and 1/4 cup brown sugar to a bowl. Toss everything well, then transfer them to a baking sheet covered with aluminum foil. Pop it into the oven, and bake it a little to get it nice and crispy. Moving on to the crust, combine 1 box graham cracker crumbs, 1/4 cup white sugar, 1/2 tsp cinnamon, a pinch of salt, and 2 sticks of melted butter in another bowl. Mix everything well together.

Step 3

Now, line your cheesecake pan with parchment paper and spray it with some cooking spray. After this, transfer the crust crumbs, spread them evenly, press down firmly to the bottom, and work your way up to the sides. Back to the crumble, once it’s done baking, remove it from the oven and break it apart. Set it aside. Next, add 5 blocks of cream cheese, 1 3/4 cup white sugar, 2 tbsp all-purpose flour, and 1 1/2 tsp vanilla extract to a large bowl. Mix them using an electric mixer while adding the eggs in between. Add 1 tsp lemon zest and 1/3 cup whipping cream. Mix them all well to combine.

Step 4

Now, pour the cream cheese mixture into the prepared crust, then pop it in the oven for two hours. After baking, let it cool overnight, then top it with the peach cobbler and the crumble. Pop it into the fridge for 30 minutes to let everything set, then serve.
