3 Ingredient Parmesan Tilapia- Easy, easy, easy!!

Remember that commercial with the woman in the kitchen- her feet up reading a book?  Then suddenly someone calls out from the next room and she jumps up- throws from flour on her face and takes the plate of rice krispies out with a huff?  This Tilapia is so easy, you will want to make your own commercial of fake effort followed by big results:)

Some people are afraid to cook fish- the skin,  those tiny bones, is it cooked through yet??!  Yes,  it can seem intimidating- follow the lead of the laziest cook on earth (me) and you will see this become a regular dish at your house, too. Tilapia is a lean fish with low mercury and good protein content. My family likes it because it has a mild flavor and it pairs perfectly with the parmesan!

First off in claiming my lazy title- I am always sure to buy my fish at Costco.  It comes skin free- and there are no bones.  Just nice fat fillets ready to be broiled up. My second claim to laziness efficiency is to line the cookie sheet with foil or parchment, this eliminates the heavy scrubbing of cookie sheets after-  something I am glad to leave in the dust. Spray your sheet with nonstick spray and proceed with the easiest dish in history.

Turn your oven on to broil high and lay your fillets out in one layer on the lined cookie sheet.

Cover with a GENEROUS sprinkle of garlic salt.  (Salting things before cooking allows the salt to meld and enhance the flavors of your food, salting at the end just ends up tasting like that- plain ol’ salt.)

At this stage I know you may be wiped out.  Hang in there- only a few things left to do.

Put the fish in the oven to broil for 10 minutes (the fish should look white and flake easily) and at the end of that ten minutes- generously pile grated parmesan on each fillet. (I sprinkle it directly from the jar.)

Let it cook until the parm is golden brown (about 5 mins) and serve those bad boys up, fitting for your most common weeknight dinner- or a fancy Sunday meal.

Flaky and full of flavor and gone about as fast as a plate of rice-crispy treats (but in this case, you actually keep all those new year health resolutions:)
