The Best Buttermilk Biscuits

These truly are the best Biscuits I have ever made. They are best eaten fresh from the oven with creme fraiche and homemade strawberry jam. YUM! The only problem is that they go fast, so double the recipe for seconds!

1 1/2 cups all purpose flour
1 1/2 Tbsp sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1/4 cold butter, cut into 1/2 inch cubes
3/4 cup cold, well shaken buttermilk

Preheat oven to 425 degrees
Sift flour, sugar, baking powder, salt and baking soda onto a piece of wax paper, then sift again into a bowl. Using a pastry blender add butter until it resembles coarse meal. Add buttermilk and stir with a fork.
Dump it all on a floured counter; knead a few times. Press out to 1/2 inch thick and cut circles using a round cookie cutter or a cup.
Place on cookie sheet and brush tops with cream or milk.
Bake 12-15 minutes.

(1 batch makes about 12 or so biscuits but it depends on the size of cutter you've chosen.)
