Glazed Carrots with Orange and Ginger

Glazed Carrots with Orange and Ginger Recipe


Ingredients:
3 cups grated carrots
1/2 cup orange juice
2 teaspoons minced fresh ginger
1 teaspoon minced garlic
1 small diced onion
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons olive oil

Directions:

Heat oil in a large pan over medium-high heat. Add carrots and ginger; cook, stirring often, until soft. Stir in orange juice, pepper and salt; simmer 1 to 2 minutes. Serve warm as a side with chicken.
