• This week I welcome Larry Horwitz. Larry is the head brewer at Crooked Hammock Brewery. Larry has served as a board member for the Brewer’s Association and President of the MBAA for two districts. He chairs the Draft Beer Quality Subcommittee for the BA, and is a judge for both GABF and the World Beer cup.
• Larry starts with a brief discussion of his background in brewing which spans some 30+ years.
• We start with a discussion on Wit beer and what makes the Wit style unique from other Belgian and Continental beers.
• Larry explains the use of unmalted wheat and oats and how the add body and character to the style.
• We discuss yeast, and his preference for a more phenolic wit yeast and flavor in his Wide Eyed Wit beer.
• Larry finishes the Wit discussion by explaining his preferences for hops and spices.
• We switch over to the Light Lager style and Larry explains how a light lager is different than a typical Pilsner.
• He explains how he keeps the calorie count low and the attenuation high when brewing a light lager.
• We talk about his preferred Weinstephan yeast and how fermentation is absolutely critical for this style.
• Larry spends a few minutes telling us about Crooked Hammer’s locations and a few of the other beers he brews.
