Spinach Tortellini Salad

I LOVE this yummy Spinach Tortellini Salad, especially in the summer and just had to share it with you!

I received this Salad recipe at an exchange a few years ago and since then, I have made it many times-in fact I crave it often-especially when it is warm outside and I feel like eating a cool dish! It is the perfect salad for a luncheon, or even dinner. And the dressing is tasty, tasty, tasty! The tortellini makes it even more filling and delicious!

Spinach Tortellini Salad Ingredients:

Fresh Baby Spinach (I use one package of spinach but have doubled this for a party or luncheon)

Canned Mandarin Oranges

Cheese tortellini, cooked & chilled (I like the refrigerated tortellini best)

Bacon, cooked, cooled & broken into pieces (About 5 slices and I like it extra crispy!)

{Toss these ingredients together in a bowl}

Dressing Instructions:

1/2 c. sugar

1/4 c. red wine vinegar

Combine sugar and vinegar in a pan on the stove. Bring to a boil. Stir to blend in the sugar and once it comes to a boil, turn off the heat and add the remaining ingredients:

1/4 c. extra virgin olive oil (or canola oil)

1/4 tsp. Paprika

1 T. grated onion

1/2 tsp. salt

1 T. toasted sesame seeds (just lightly brown the sesame seeds in a frying pan)

Before pouring the dressing on the salad, stir it really well. ENJOY!

  • 5 Slices Bacon, cooked, cooled & broken into pieces
  • ½ c. sugar
  • ¼ c. red wine vinegar
  • ¼ c. extra virgin olive oil (or canola oil)
  • ¼ tsp. Paprika
  • 1 T. grated onion
  • ½ tsp. salt
  • 1 T. toasted sesame seeds (just lightly brown the sesame seeds in a frying pan)
Instructions
  1. Toss together baby spinach, mandarin oranges, cheese tortellini, bacon.
  2. Combine sugar and red wine vinegar in a pan on the stove. Stir to mix in the sugar and once it comes to a boil turn off the heat and add the remaining ingredients.
  3. Pour dressing over the mixed salad.
