KHEER | PAYASAM  -  Hello Friends, Today I am sharing an easy, healthy, and delicious kheer recipe. Kheer (or) Payasam hardly needs an introduction; it is a traditional Milk-based dessert served during special occasions. 

No feast is complete without a dessert. So here comes a  kheer that is prepared with Carrot, milk, and sugar. I would definitely suggest this recipe for any parties or gatherings. It can be prepared ahead and refrigerated. 

There are many ways of preparing this recipe, and here is my version.  Do try out and enjoy. So, let's get started.




HOW TO MAKE CARROT KHEER | CARROT PAYASAM


First step: Wash and peel the skin from the carrots.

Second step: Chop them roughly and pressure cook until soft (2 - 3 whistles) with sufficient water. When the pressure is released, allow it to cool and grind it to a fine paste. 

Third step:  In a heavy-bottomed pan, heat the milk and bring it to a rolling boil. 

Fourth Step: Add the carrot puree, cardamom powder, and sugar. Reduce the flame to low and allow the milk to boil for 10-15 mins, stirring in between.

Fifth Step:  Once the milk gets reduced to a little less than the original quantity. Add the roughly chopped nut and simmer it for few more minutes.

Serve it hot or cold.

Ingredients

  • 3 / 4 - medium-sized carrots
  • 1 liter of milk
  • 1/2 cup of sugar
  • Pinch of cardamom powder
  • Few Almonds -roughly chopped
  • Few Pista - roughly chopped
  • Few strands of saffron - optional


Instructions

Notes

  • Adjust the sugar according to your taste buds.
