Mississippi mud cake got its name from mud along the banks of the Mississippi River mud, and the name has stuck ever since.

How is Mississippi Mud Cake different from Mississippi Mud Pie?

The basics for the mud cake are pretty much the same as for the mud pie. The big difference is the shape of the desert.

While this Mississippi mud cake is made in a 9×13-inch pan, Mississippi mud pie is made in a pie pan.

Need to Substitute?

Instead of using all-purpose flour, you can use any one-for-one flour substitute like almond, coconut, or King Arthur’s Gluten-Free Measure for Measure Flour. Just note that it might change the taste and potentially the texture.

You can use marshmallow fluff instead of creme since they are basically the same thing. The only difference between them is how they are whipped.

If you don’t have marshmallow creme at home you can use Sally’s Baking Addiction’s homemade marshmallow creme recipe in its place.

If you don’t have any walnuts you can use pecans.

Is it better to use marshmallows or marshmallow creme or both?

This recipe calls for marshmallow creme, but if you don’t have any and don’t feel like running to the store or making your own, you can replace it with marshmallows.

Whole marshmallows do change the texture of the topping slightly, but it will still taste delicious. Or you can get super fancy and use whole marshmallows AND marshmallow creme.

Either way, it is going to end up tasting amazing!

How to Make Mississippi Mud Cake

  1. Mix together all cake ingredients together in a large bowl.
  1. Pour the batter into a greased and floured 9 X 13-inch pan. Bake at 350 degrees for 35 to 40 minutes.
  1. Remove the cake from the oven, and immediately spread 7 ounces of marshmallow creame over the top of the cake while it’s still warm.

Make the icing immediately after spreading the marshmallow cream over the cake. You want to spread the icing over the cake while it’s still warm.

  1. Combine cocoa, butter, and milk in a saucepan and bring it to a boil, stirring constantly.
  1. Remove the saucepan from the heat and add vanilla and powdered sugar. Stir until smooth and beat with an electric mixer.
  1. Spread the icing over the cake while it’s warm. Sprinkle chopped nuts, coconut, and chocolate chips on top.
  1. Let the cake cool completely before serving.

Can mud cake be made in advance?

You can make up Mississippi mud cake ahead of time, especially if you need it for an event. Just make it up a day or two in advance, and store it in the fridge until you need it.

How to Store Mississippi Mud Cake

Once you’ve topped the cake with marshmallow creme and icing and it has completely cooled, you can either let the cake sit at room temperature in an airtight container for up to 5 days, or you can cover it and keep it in the fridge for up to 2 weeks.

  • 3 tablespoons cocoa powder
  • 1/2 cup butter
  • 1/3 cup milk

  • 16 ounces powdered sugar sifted

Cake Directions

  • Preheat the oven to 350 degrees.
  • Grease and flour a 9 X 13-inch baking pan.
  • Mix together all cake ingredients in a large bowl.
  • Pour the batter into the prepared pan.

  • Remove the cake from the oven and leave it in the pan.

Marshmallow Layer

  • Immediately after removing the cake from the oven and while the cake is hot, spread 7 ounces of marshmallow creme over the top of the cake.

Icing Directions

  • Make the icing immediately after spreading the marshmallow creme over the cake. You want to spread the icing over the cake while it is still warm.
  • Combine 3 tablespoons cocoa, 1 stick butter and 1/3 cup milk in a saucepan and bring it to a boil, stirring constantly.
  • Remove the chocolate mixture from the heat and add 1 teaspoon vanilla and 1 box of powdered sugar. Stir or mix until smooth.
  • Beat well and spread the frosting over the cake while warm.
  • Let the cake cool completely before serving.
