Irish Apple Coffee Cake



In honor of the small bit of Irish in my family I thought I’d give you a few out of the normal Irish recipes in honor of St. Patrick’s Day. 

To be honest these aren’t from my family. Apparently my family did not embrace the Irish side that much, we were too busy cooking Italian food! But I found recipes online last week and decided to give them a good test over the weekend. This one was tasty and would work well for breakfast.

When it’s finished it’s rather dense – so a small slice is a good size serving. I decided to leave the measurements in metric because I was too lazy to convert to American measurements. I always recommend having a digital scale in the kitchen for this very reason.

IRISH APPLE COFFEE CAKE
Cake:
110g non-dairy margarine, melted
150g light brown sugar
2 large eggs
210g flour
1 tsp baking powder
1 tsp ground cinnamon
3 Granny Smith apples – peeled, cored and cut in a large dice

Crumble:
50g light brown sugar
50g plain flour
50g quick cook oats
50g non-dairy margarine, cold
  • Pre-heat oven to 350’F
  • Spray a 8x8 square pan with non-stick spray and set aside
  • Beat margarine & brown sugar together until pale
  • Add eggs and mix in until incorporated

  • In a separate bowl combine flour, baking powder, and cinnamon together
  • Slowly mix dry ingredients in with the wet
  • Stir in chopped apple
  • Batter will be thick and sticky
  • Spread batter into pan
  • Place crumble ingredients together in a small bowl
  • Mix together with fingers until it looks like pebbles
  • Sprinkle over top of cake
  • Bake for 40-45 minutes or until a wooden pick inserted into it comes out clean
  • Remove from pan and let cool for 10 minutes before you cut
