Oat Bran Muffin with Vanilla & Honey

Continuing on with this month’s breakfast theme I bring to you another Muffin recipe. This one is a delicious mix of various things including Oat Bran – yep, still trying to conquer a healthier but tasty muffin. Happy Cooking!

OAT Bran MUFFINS 
WITH VANILLA and HONEY
2 ¼ c oat bran
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
¼ c gold raisins
8 oz vanilla non-dairy yogurt (soy or coconut)
6 tbsp honey
2 egg whites
2 tbsp vegetable oil
2 tsp vanilla extract

  • Pre-heat oven to 425’F
  • Combine dry ingredients in a large bowl
  • Stir in raisins – make sure to coat them nicely with dry flour
  • Add in all liquid ingredients
  • Stir until just moistened – do not over mix
  • Drop by the spoonful into prepared muffin tins
  • Bake 15-18 minutes or until a wooden pick inserted in the center of a muffin comes out clean
  • Serve warm or cold

Yield: 12 muffins
