CHERRY Oat Bran MUFFIN
1 c oat bran
1c unbleached white flour
½ c sugar
½ tsp kosher salt
1 ½ tsp baking powder
1 egg
¼ - 1/3 c vanilla soy milk
¼ c vegetable oil
¼ c dried bing cherries, chopped
Non-stick cooking spray
- Heat oven to 400’F
- Spray muffin cups with non-stick spray
- Add oat bran, flour, sugar, salt, baking powder to a bowl and mix
- In another bowl beat eggs, add soy milk & oil, stir to blend
- Pour wet ingredients into dry ingredients, add cherries
- Mix batter swiftly for a few strokes – DO NOT OVER BLEND, it’s ok if you see a little unmixed flour in the batter
- Spoon batter into prepared muffin tins, fill ¾ full – whole grain muffins do not rise very high
- Bake 12-14 minutes
- Remove from oven, cool slightly
- Serve warm with a little non-dairy margarine and honey
