Cherry Oat Bran Muffins




CHERRY Oat Bran MUFFIN
1 c oat bran
1c unbleached white flour
½ c sugar
½ tsp kosher salt
1 ½ tsp baking powder
1 egg
¼ - 1/3 c vanilla soy milk
¼ c vegetable oil
¼ c dried bing cherries, chopped

  • Heat oven to 400’F
  • Spray muffin cups with non-stick spray
  • Add oat bran, flour, sugar, salt, baking powder to a bowl and mix
  • In another bowl beat eggs, add soy milk & oil, stir to blend
  • Pour wet ingredients into dry ingredients, add cherries
  • Mix batter swiftly for a few strokes – DO NOT OVER BLEND, it’s ok if you see a little unmixed flour in the batter
  • Spoon batter into prepared muffin tins, fill ¾ full – whole grain muffins do not rise very high
  • Bake 12-14 minutes
  • Remove from oven, cool slightly
  • Serve warm with a little non-dairy margarine and honey
