We were asked to make this Brazilian Soup a few years ago for a customer’s New Year’s party. It was a hit with them and also with us. I hope you enjoy making this and sharing it with your friends and family.

FEIJOADA
2 tbsp. vegetable oil
3 cloves garlic, sliced thin
1 large onion, chopped
3 ½ quarts water
1 lb fresh spicy sausage, such as linguica
¾ lb salt cured beef, in one piece, like corned beef
1 ½ lb smoked pork chops
¾ lb chorizo, in one large piece
1 dried red chile
Salt
Toasted tapioca flour
- Heat the oil in a large, heavy casserole
- Add garlic & onion – cook over medium-low heat, stir occasionally, until onion is soft
- Stir in drained black beans
- Add water to casserole, bring to boil over medium-high heat
- Reduce heat to low, simmer beans for 1 hour, stir occasionally
- Add all meats and dried chile, cook until the beans are tender, about 1 hour
- Remove meats and slice thin, discard bones
- Pick out chile and discard
- Season beans with salt
- Serve in soup bowls and garnish with sliced meats
- Sprinkle with toasted tapioca flour before eating
