You all know I’ve been on a quest for a good Nacho Cheese Sauce ever since I was forced to go dairy free. Not exactly sure why I’m obsessing about this as I never ate it regularly before but must have it now. I stumbled across this recipe and it was ok. I have yet to find an exact match, but some have certainly been better than others. This is good in a pinch and certainly passable if you’re looking for a nosh during a football game (GO PATRIOTS!).
Vegan Nacho Cheese Sauce
2 medium potatoes – washed, peeled & chopped
3 large carrots – washed, peeled & chopped
½ c nutritional yeast
1/3 c olive oil
1/3 c water
1 tbsp fresh lemon juice
1 ½ tsp kosher salt
(4oz can diced jalapeno peppers – drained **OPTIONAL)
- Steam potatoes & carrots until soft
- Blend steamed vegetables with yeast, oil, water, lemon juice & salt until smooth and creamy
- Stir in peppers by hand if using
- Use as a sauce or serve with chips
